Knife Handle Materials Explained
The handle is where you actually meet the knife. What each material — POM, Pakkawood, Micarta, Fibrox, wood and steel — does for grip, durability and hygiene.

The blade gets all the attention, but the handle is where your hand actually meets the knife — and it decides comfort, grip and how the knife holds up over years. Handle material does not change how a knife cuts, but it changes how it feels and how safely you can use it wet. Here is what the common materials are and what each does well.
The synthetic handles (grip and durability)
- POM (polyoxymethylene) and ABS — the dense, smooth synthetic on many forged German knives (Wüsthof, Henckels). Triple-riveted to a full tang, it is essentially indestructible and easy to clean, though a polished synthetic can get slippery when wet.
- Fibrox— Victorinox's textured, grippy synthetic. Not pretty, but it grips superbly when wet or greasy and is NSF-rated — which is why it dominates professional kitchens.
- Santoprene / TPE — the soft, grippy rubber-like material on Mercer and many foodservice knives, often with a finger guard. Comfortable, secure wet, and hard-wearing.
- Micarta — layers of linen or paper set in resin, found on knives like the Miyabi. Warm and grippy in the hand, very durable, a step up in feel and price.
The wood and composite handles
- Pakkawood— wood veneers impregnated with resin, common on Japanese knives (Shun's D-handle, MAC). It looks like real wood but is far more stable and water-resistant, and it takes the classic D-shape well. A great blend of beauty and practicality.
- Natural wood (magnolia, ho wood) — traditional on some Japanese knives. Beautiful and light, but it needs more care: keep it dry, do not soak it, and never put it in the dishwasher.
One-piece steel handles
Some knives (the Global G-2) use a seamless one-piece steel body — blade and handle formed from a single piece, often with a dimpled surface and a sand-filled hollow for balance. The big advantage is hygiene: no rivets, no bolster crevice, nothing to trap food. The catch is feel — an all-metal handle is polarizing and can be slippery when greasy, so it is a try-before-you-buy material.
How to choose
Prioritize grip when wet and comfort in your hand over looks — a handle that turns slippery is a safety issue, as we cover in knife safety basics. Textured synthetics (Fibrox, Santoprene) are the safest wet; POM and Pakkawood are durable and handsome; wood needs the most care. Whatever the material, hand-wash and dry it rather than using the dishwasher, which is hard on every handle type — the full routine is in knife care and storage.
