The Global G-2 and the MAC MTH-80 are both light, thin, Japanese-made knives that cross-shop constantly — but they feel like opposite objects in the hand. The Global is a seamless, all-steel design with a distinctive dimpled handle; the MAC is a conventional-looking blade with a Pakkawood handle that quietly out-cuts almost everything and tops our overall ranking. Both are excellent; the choice is mostly about steel and how each one feels.

Cutting and steel

On pure cutting the MAC edges ahead, and the reason is steel: its harder molybdenum-vanadium blade (~HRC 59–61) holds a keen edge noticeably longer than Global's softer CROMOVA 18 (~HRC 56–58), and its thin, dimpled profile falls through produce with minimal wedging. That combination is why the MAC leads our best chef knives list. The Global cuts beautifully too — it is thin and keen — it simply dulls a little sooner and needs the stone a bit more often.

Feel, handle and hygiene

This is where the Global earns its following. It is a one-pieceknife — blade and hollow, sand-filled handle formed as a single seamless body — so there are no rivets or seams to trap food, which some cooks love for hygiene and looks. But that dimpled metal handle is divisive: it can feel slippery when wet and its tip-forward balance is an acquired taste. The MAC's conventional Pakkawood handle is more neutral and grippier for most hands. Both are light, so if you have found German knives tiring, either will feel like relief — see best lightweight chef knives.

How to choose

Buy the MACif you want the best cutter and longest edge life and prefer a neutral, grippy handle — it is the "buy once" pick for most keen cooks. Buy the Globalif the seamless one-piece design and its light, distinctive feel appeal to you, and you like the idea of a knife with nothing to trap food. Hold the Global's handle first if you can — it is the one thing people either love or return. Either way, both reward a cook who keeps an edge on their knives.
