The Easiest Knives to Sharpen
Some knives come back to sharp in minutes; others fight you. Here's what makes the difference — and the best blade to learn the skill on.

"Easiest to sharpen" and "holds its edge longest" pull in opposite directions, and understanding why is the key to the whole question. The same softness that makes a knife dull a little faster is what makes it come screaming-sharp again in a few minutes on a stone. If your goal is to learnto sharpen — or to own a knife you'll actually keep sharp because it's no hassle — easy-to-sharpen is often the smarter target than maximum edge retention.
What makes a knife easy to sharpen
- Softer steel (~HRC 55–58). This is the big one. Soft German-style stainless like X50CrMoV15 abrades quickly, so a burr forms fast and the edge comes back in a few passes. Harder steel resists abrasion — great for edge life, slower and fussier to sharpen.
- A symmetric, double bevel.A normal Western knife is ground on both sides evenly, so you just alternate. Single-bevel Japanese knives (yanagiba, usuba) and chisel grinds are far harder to do well and are not a beginner's job.
- No full bolster. A bolster that runs all the way to the heel (a full-bolster Wüsthof) eventually blocks you from sharpening the whole edge on a flat stone. A short or sloped bolster (a Mercer Genesis or Zwilling Pro) keeps the entire edge accessible.
- Simple, moderately thick geometry. A forgiving edge angle (around 20° per side) leaves more margin for a wandering hand than a very acute ~12° Japanese edge, where a tiny angle error misses the apex entirely.
- Not serrated.Serrated edges (most bread knives) can't be sharpened on a flat stone at all — they need a tapered rod, one scallop at a time, and mostly they're just replaced.
What makes a knife hard to sharpen
The mirror image: very hard steel (powder-metallurgy "super steels" and hard Japanese blades above ~HRC 61) resists abrasion and wants diamond stones and good technique; a very acute edge needs a rock-steady angle; a full bolster blocks the heel; single bevels and serrations need special tools. None of these are badknives — a hard Japanese blade rewards a skilled sharpener with an incredible edge that lasts. They're just not where you learn. The easiest knife to learn on
A soft-steel Victorinox Fibrox is the classic answer, and it's the reason it tops our beginners list: the steel is soft enough to raise a burr in a minute or two, the double bevel is symmetric, there's no full bolster in the way, and it's cheap enough that you won't panic about practicing on it. Any budget German-style stainless knife (the Mercer Genesis, most sub-$100 knives) behaves the same way. Learn on one of those, get comfortable raising and removing a burr, and only then move up to a harder, keener blade.
Easy to sharpen, or just sharpen less often?
There's a second route to "low hassle": instead of a knife that's quick to sharpen, buy a harder one that needs sharpening rarely, and keep it aligned with a honing steel in between. Both are valid. What is the easiest knife to sharpen?
A soft-steel, double-bevel Western knife with no full bolster — the classic example being a Victorinox Fibrox. The soft steel raises a burr fast, the symmetric edge just needs alternating passes, and nothing blocks the heel. It dulls a little faster than a hard Japanese knife, but it comes back in minutes.
Are Japanese knives harder to sharpen?
Generally yes — their harder steel resists abrasion (so it's slower to re-profile) and their more acute edges demand a steadier angle. Double-bevel Japanese knives like a Tojiro DP are manageable once you can sharpen; single-bevel traditional knives are a specialist skill. The payoff is an edge that lasts far longer.
Does a bolster make a knife harder to sharpen?
A full bolster does — it runs to the heel and eventually stops you sharpening the last section of edge on a flat stone. A short or sloped bolster (Mercer Genesis, Zwilling Pro) avoids the problem while keeping the heft of a forged knife.
Can you sharpen a serrated bread knife?
Not on a flat stone. Serrations are sharpened one scallop at a time with a tapered ceramic or diamond rod, and honestly most people just replace a cheap serrated knife. A plain-edged chef's knife is far easier to keep sharp.
