Sharpening Stone Grits Explained
Grit numbers confuse every beginner. Here's what coarse, medium and fine actually do, which grits you genuinely need, and why one combination stone covers almost every kitchen knife.

Grit is the single most confusing thing about buying a sharpening stone. The number describes how coarse or fine the abrasive is: lower numbers are coarser (remove metal fast, leave a rough edge) and higher numbers are finer (remove little, refine and polish). Get the grit choice right and sharpening is simple; overthink it and you buy stones you'll never use. Here's what each range does and what a home cook actually needs.
What the grit ranges do
- Coarse (under ~400):for repair only — setting a new bevel, fixing a chipped edge, or reviving a very dull knife. Removes metal fast; leaves a rough edge you must refine.
- Medium (~800–1200): the sharpeninggrit — this is where an edge is actually created. A ~1000-grit stone sets a keen working edge on almost any kitchen knife. If you own one stone, it's this one.
- Fine (~3000–6000): the finishinggrit — refines and polishes the edge from the 1000 stone into something that glides. Nice to have, not essential.
- Extra-fine / polishing (8000+): mirror polish for hard Japanese steel and enthusiasts. Diminishing returns for everyday cooking.
The grit numbers aren't standardized — don't obsess
One honest caveat: grit ratings vary between makers and systems (Japanese, ANSI, FEPA), so a "1000" from one brand isn't exactly a "1000" from another. Don't chase precise numbers — think in ranges (coarse / medium / fine) rather than exact figures. What matters far more than the number is holding a steady angle and raising a burr; grit is the easy part.
Which grits a home cook actually needs
For most kitchens, two grits cover everything: a 1000 and a 6000— 1000 to sharpen, 6000 to finish. That's exactly why a 1000/6000 combination stone is the standard recommendation and our default pick for a first stone: one block, both jobs, low cost. Add a coarse (~400) stone only if you need to repair chips or reprofile a badly neglected edge, and a very fine (8000+) stone only if you own hard Japanese knives and enjoy chasing a polish. Everyone else can ignore the far ends of the range.
Grit order and technique
Always work low to high: sharpen on the coarser grit until you raise a burr along the whole edge, then move to the finer grit to refine it. Skipping straight to a fine stone on a dull knife just polishes a dull edge.
